The Santoku knife is an Asian-type knife with
broad blade and especially sharp cutting edge. It is optimized
for cutting fish, vegetables, and smaller-boned and/or boneless
meats. The hollow edge is ideal for extra thin cutting. This
knife style has been used in Japan for many years, but was recently
made popular in the US by television chefs. Also available with
a 5" blade.
