I recently purchased the Miyabi Birchwood SG2 8-inch Chef’s Knife, and while I haven’t had the chance to use it yet, I’m already impressed by the craftsmanship. The blade is stunning, with a beautifully patterned 101-layer Damascus steel finish and a razor-sharp Honbazuke edge that speaks to its precision. The Karelian Birchwood handle feels smooth, balanced, and ergonomic in hand, and the overall design reflects the kind of care and tradition you’d expect from Japanese knife-making. I’m genuinely looking forward to putting it to work in the kitchen and seeing how it performs with real prep.
This is one of the more beautiful Japanese knives that I've seen. Comes out the box extremely sharp, slices effortlessly.
One of the best knives I've ever used. Sharp, Smooth cutting and light. The handle feels like an extension to my arm. I will be collecting a set very soon.
I love this knife! After trying dozens of chef knives, this was light and balanced and fit perfectly in my small hand. Some of the wording has come off after years of use, but I expect that to happen.
