Experience the precision of Japanese craftsmanship with the MIYABI Artisan 8-Inch Chef's Knife, a premium kitchen knife meticulously handcrafted in Seki, Japan. Combining centuries-old blade-making traditions with advanced metallurgy, this versatile chef's knife delivers exceptional sharpness, edge retention, and balance for cooks who demand uncompromising performance.

At its core is SG2 micro-carbide powder steel, renowned for its remarkable hardness and ability to maintain an incredibly sharp edge. The blade is ice-hardened using MIYABI's CRYODUR® process and hand-honed with the traditional Honbazuke technique, producing a razor-sharp edge that glides effortlessly through vegetables, herbs, meats, and fish with outstanding precision.

The blade's striking Tsuchime (hand-hammered) finish isn't just visually stunning—it also helps reduce friction and minimizes food sticking during slicing and chopping. Paired with an ergonomic Cocobolo Rosewood Pakkawood D-shaped handle, this knife offers exceptional comfort, balance, and control for both right-handed users and those who appreciate traditional Japanese knife design.

I did a switch from Shun this year and what a difference so far. Its so light Im scared to hurt this blade. Truely a sturdy piece of work thought and very beautiful. Grazie mille for such great craftsmanship.

I am no chef but I cook on a daily basis. The Miyabi knife makes cooking a breeze. Using a professional knife makes all the difference in the world. A vast difference from all my old knives. I did extensive research on different knife brands and this one checked all the boxes. The only factor that you have to consider is that Japanese steel is thinner (for sharpness) so you must handle with care. These knives will potentially get chips if you use it to cut bone or tougher fruits like butternut squash. That being said, it glides through foods effortlessly. The handle feels great to hold for all cutting positions and looks beautiful. The craftmanship on my Miyabi knife is amazing and the attention to detail second to none.

This is a beautiful knife with a wicked sharp edge. I love how balanced it is, and the extended bolster is perfect for doing detail work.

Fell in love with the knife when I first laid eyes on it. My wife got one for my father-in-law who loves cooking as a birthday present. I guess she noticed my not-so-secret admiration that she surprised me with my very own chef knife too. I will treasure it daily.

Wow.. I'm so happy I splurged on this knife! I was hesitant to spend over $200, but it does make a difference. For reference, I had another Zwilling knife that was ~$100. The knife is very sharp and looks/feels great in my hands. I can make more precision cuts and very fluid cuts. Well worth the purchase and highly recommend.
